The easiest vegan burger
For this vegan burger – all you need is courgettes, ground oats (oat flour), sun dried tomatoes, tomato concentrate, cumin, turmeric, miso paste and a dash of chilli powder plus rapeseed oil. For approx 8-9 burgers:
3/4 glass of ground oats (flour like consistency)
5-6 sun dried tomatoes (chopped)
1-2 table spoons of tomato concentrate
2 tea spoons of ground cumin
2 tea spoons of ground turmeric
1/2 tea spoons of cayenne pepper or chilli
1 1/2 table spoon of miso paste
1 1/2 table spoon of rapeseed oil
1 medium size red onion
2 cloves of garlic
Grate courgettes (use the large grater holes), next squeeze the courgette to remove the extra moisture and set aside.
Dice onion and garlic and fry in rapeseed oil until golden, next add the courgette and keep stirring until it softens. Stir in the miso paste and add all the spices. Keep stirring, add the oats, sun dried tomatoes and tomato concentrate, mix well and keep on the stove continually stirring it for a few more minutes. The mixture should be quite sticky. If it is too moist, add more oats. Set the batter aside and wait until it cools down a bit. Preheat the oven to 190C and line a tray with baking parchment. Form the burgers and bake for 40 mins remember to turn them over after 20 mins.
